What is Green Curry?
Gaeng keow wan gets its colour from fresh green bird’s-eye chillies pounded with lemongrass, galangal, kaffir lime zest, coriander root, shrimp paste and toasted spices. “Wan” refers to the sweet green colour, not sweetness.
The paste is fried in cracked coconut cream until fragrant, then simmered with chicken, beef or fish balls, small Thai aubergines and pea aubergines, finished with sweet basil.
Eaten with rice or with fermented rice noodles (khanom jeen).
Regional versions
Bangkok shops famously pair it with fish balls (look chin pla); in the south it can be very hot.
How to order it
“Gaeng keow wan gai” (chicken). With “khanom jeen” for the noodle version.
