What is Crab Omelette?
The Thai omelette (khai jeow) is deep-fried: beaten egg is poured into very hot oil so it puffs up crisp and golden outside and soft inside.
Jay Fai, the goggled street-food cook on Maha Chai Road, turned it into a luxury by stuffing it with a huge amount of crab meat. Her stall’s MICHELIN star, and Netflix and YouTube coverage, made it one of the most famous dishes in Bangkok.
Expect long queues and high prices at Jay Fai; Krua Apsorn’s fluffy crab-meat omelette is the beloved alternative.
Regional versions
Everyday khai jeow moo sap (with minced pork) over rice with sriracha is a cheap comfort food everywhere.
How to order it
“Khai jeow poo”. At street stalls, “khai jeow moo sap rad khao” (pork omelette on rice).
