Whether you are visiting Thailand for the first time or have been living there for longer than you can remember, there is always something new, interesting and exotic to experience. What has always been the most dear to me is the multitude and availability of local dishes and cuisines (both traditional and fusion style) that really express Thailand’s culture and the Thais flavor and attitude towards life.

The Misnomer of Street Food: So often when I host an overseas visitor they are amazed at the sheer number of people eating on the street asking me “How safe is it really and do people get sick?” If you’ve been to India, then eating fresh fruits, noodles, grilled chickens and other curiously looking meats from the street vendors in Bangkok is nothing. I’ve been eating from food stalls/street vendors/push carts for years and find that dining in this manner is no more dangerous than eating in a restaurant except for the fact that you are eating in plastic chairs, perhaps share a table with another hungry patron or breath a little exhaust from passing cars here and there; but generally the food is fresh, well prepared, very tasty and overall fairly safe to eat-street vendors don’t like to carry a lot of over-head; most cannot afford to so everyday they go to the fresh markets buying only the amount of ingredients that they anticipate using in a given day; very seldom do they store meats and vegetables like a restaurant.    
     
When trying to decide which food stall to eat from (as there are many to choose from) it’s best to observe where the locals eat (of course using your judgment to a certain extent) and if there is a line, a lot of chaos, and definitive smells that draw a curious sense and hunger; then you are probably at the right place.

Sukhumvit Soi 38 has a plethora of street vendors hawking various dishes such as Moo Grob (crispy pork belly with Chinese broccoli, chili and oyster sauce), Ca Pow Gai (Thai Basil Chicken Fried Rice), and Kuaytiaw Raat Naa (Fried Noodles with Pork & Vegetable Gravy) among others-my favorite is Ba Mee Puu (Egg Noodles with Crab) served from a push cart about 20 meters on the right hand side of Sukhumvit Soi 38 when coming from Thonglor BTS. At the corner of Soi Convent and Silom road (Friday and Saturday nights only) P’ Uan (meaning fat in Thai; not to be construed in a negative sense as in the western culture) serves up the best Moo Ping (Pork Thai Barbecue) in Bangkok-the pork is grilled and caramelized to perfection where the robustness of each bite intensifies leaving you not just tasting the Moo Ping, but experiencing it.

My Pad Thai and Noodles: The first meal that many Bangkok “first timers” order is either Pad Thai or Fried Rice as they want to compare these dishes to the familiar dishes that they get in their own home country (an normally associate these dishes as not being too spicy). Pad Thai is made up of stir-fried rice noodles with eggs, fish sauce, tamarind juice, and a combination of bean sprouts, shrimp, chicken, or tofu; for a slight variation of Pad Thai from the traditional sense, I recommend Pad Thai Thip Samai (Salaya, Puthamonthon, Nakornpathom, Bangkok, (0) 81630 6444); established in 1966 that serves two definitive dishes such as the Pad Thai with large prawns enclosed in an egg omelet (Pad Thai Kai Ho) or the Pad Thai Song-Krueng where the Sen Chan or grass noodle can be laced with crab meat, ground cuttlefish and/or sliced mango.

Located in Pranakorn, Somsrong Pochana’s kitchen creations originate from the Sukhothai Province serving Sukhothai noodle consisting of BBQ pork with green sprouts in the noodles and delicately sprinkled with dried chili’s for taste and intensity—for a less spicy flare the Thai Spaghetti with coconut milk, pineapple, & dried shrimp (Kanom Jeen Sao Nam) is a safe bet. If you like Duck and happen to be in the Phaholyothin area, a must try is the Steamed Duck Noodles at Yothin Duck Noodles food stall (#1301 Soi Paholyothin 11 (beginning of the Soi), Paholyothin Rd., Bangkhen, Bangkok, (0) 2 278 1738) where the duck meat effortlessly falls off the bone releasing the succulent juices and natural ripeness of the duck.

Don’t Be Scared – Just Eat it!: Bangkok has lots of hidden delicacies and interesting cuisines that are often overlooked as newcomers and veterans of Bangkok tend to stick to the same restaurants over and over again. There is so much great food out there to be eaten that I encourage everyone to venture away from the more touristy areas into the more unknown or ‘less frequented by foreigner ones.’ Talk to locals, people watch, read online reviews, get yourself lost in China town. Whether you have a strong passion for food or just like to enjoy a good meal, get out and do a little exploring. You won’t like everything you taste as you’ll have good meals and bad meals, but who cares-it is all part of the experience! The main thing is that you have fun and learn a lot about the Thai culture, people and food along the way.

Sekong is the ideal place for those who really want to step off the well worn tourist trail and get to know the real Laos. This pretty area is situated in the southeast part of Laos in the Sekong River Valley, and the river is a good spot for fishing and swimming and perhaps even a boat trip down the river to one of the nearby villages.

This is a great place for hiking and trekking and as you walk through the countryside you will wander through lush rice paddies, fruit orchards and tropical forests which are home to a large number of unusual animals and pretty plants and flowers.

A number of different ethnic tribes live in the Sekong River Valley and the countryside is full of small villages belong to people such as the Lave, Lanam, Kaleum, Dakchung and Thateng. This is a good place to get to know the different tribes and discover their unique lifestyles.

A great way to pass the time is by getting up at around 5a.m to watch people fishing in the river and walking along the banks. The Buddhist monks wander through the villages early each morning to receive alms and you will see processions of orange robed monks carrying large metal bowls.

 Part of Sekong’s appeal for most people is its remoteness and the fact that not many travelers make it this far. Don’t expect to find a large number of fancy guesthouses or restaurants selling international food here. But for those who do decide to stay, the gentle pace of life and friendliness of the people can be very addictive. However, people who need their creature comforts will be able to find a hotel or two here and it is possible to hire a motorbike to explore.

Sekong is blessed with electricity around the clock, but if this seems a little too decadent pay a visit to the nearby village of Tha Teng, which is extremely picturesque and without electricity or running water offers a real insight into the traditional Lao way of life.

Also known as Stoeng Treng, this little town in north-eastern Cambodia is a good place to stop on the way to or from Laos. This is a great place to walk around and makes a fine introduction to Cambodia as well as a place to say a final farewell.

This area is well known for its weaving and there are many places around town where you can watch fabric being woven in the traditional way and perhaps pick up a bargain or two. The sunset in Stung Treng is simply spectacular, and this is a great time of day to meet people and chat over a beer or two as the sky suddenly fills with colours as the sun slowly sinks behind the horizon.

There are a number of pretty places to visit just outside Stung Treng. Walk four kilometres to Thala Bariwatt and you will find the Preah Ko temple, which was built in 7th century during the reign of King Javarman I.

Just six kilometers away, the village of Hang Kho Ba is a great place to walk to. There is a pretty pagoda known as Hang Kho Ba and this is a good place to try locally grown tamarind fruit and pava fish. There are also a couple of nature reserves nearby namely Phnom Preah Theat and Anlong Trey Phsot, which are great places to explore.

Stung Treng is ideal for those who want to relax and recharge their batteries for a day or two. There are a number of comfortable guesthouses here as well as bars and restaurants to indulge in. simply lay back in a hammock and listen to the wind in the trees for an hour or two or catch up on some reading.

If you are travelling through Cambodia between July and December, a great way to reach Stung Treng is by taking a boat up the Mekong River from Kratie. There is also an airport near Stung Treng with regular flights to and from Phnom Pehn, which is 485 kilometres to the south.

Situated to the south east of Chiang Mai, Lamphun Province is steeped in history and culture. The province capital is the quiet town of Lamphun, which can be found 670 kilometres from Bangkok. The town is located on the bank of the Kuang River and contains many interesting attractions including ancient sites and relics, forests, mountains and pretty lakes. Lamphun is also well known as a producer of longans, the extremely sweet and delicious Thai fruit with its hard, yellow shell.

Lamphun is an area of great natural beauty. Particularly picturesque is the Mae Ping National Park, with its lush forests and the Ping River running through it. The park is also home to the seven-tiered Namtok Ko Luang and a limestone cave full of stalactites and stalagmites.

Another area of intense natural beauty is the Doi Khun Tan National Park, with its pretty orchids and lilies as well as impressive bamboo and pine forests. Namtok Tat Moei is an imposing waterfall in this park and an interesting feature is that it can be reached directly by train from Chiang Mai.

Lamphun is blessed with a large number of sites of highly respected historical and cultural importance. Wat Phra That Hariphunchai was built during the reign of King Arthitayarat, a descendant of Queen Chamthewi, around 800 years ago. Principal features of this temple include the 46-metre tall golden chedi and the Khmer-style Buddha statue. Other interesting temples in this area include Wat Phra Yuen, Wat Mahawan, Wat Chamthewi and the highly revered Wat Phra Phutthabat Tak Pha, where according to legend the Lord Buddha once stayed, leaving a likeness of monk’s saffron robe and his footprint imprinted in the stone ground.

The impressive Hariphunchai National Museum is a good place to discover the area’s rich and interesting history. The museum features displays of prehistoric human skeletons and objects of arts from the Dvaravati, Hariphunchai, Lanna and Rattanakosin periods. There also some interesting displays of temple art, which has been carefully collected and displayed over a period of several years.

Another way to get an idea of the area’s history and culture is by visiting Ban Hong, which is the site of a warm and welcoming 1,400-year-old community dating back to the Hariphunchai Kingdom.

If you are interested in handicrafts, the cotton weaving village of Pasong makes a good day trip. Whilst there, pay a visit to Wat Chang Khao No and the bustling market places, where you can buy a wide range of cotton products.

There are a large number of interesting celebrations in Lamphun Province. Particularly vibrant is the Lam Yai Festival, which takes place in the second week of August. Also known as the Longan Fair, the objective is to promote the area’s sweet and succulent the fruit. The festival features a parade of floats made from longan fruit and the Miss Lam Yai contest.

Another popular event is the Song Nam Phra That Hariphunchai which is held to celebrate the province’s principal religious site and takes place in May.

Many items can be purchased inexpensively in Thailand, as long as you know where to look. Reasonable copies of Billabong shorts, Nike trainers and hundreds of other products can be bought for surprisingly low prices. However, quality varies widely, so have a close look before you buy.

Thailand operates under a bartering system, which means that goods sold by street vendors in markets or in some shops are flexibly priced and you can get a very good deal if you know how to haggle powerfully and politely. Like many aspects of Thai culture, bartering is an intricate system that is easy to underestimate. The trick is to let the vendor make the first offer then ask ‘Can you make a discount?’ A good benchmark is to offer half the quoted price. Be firm, but make sure that you smile and possibly make a joke – if you are seen as too pushy or aggressive you will not be taken seriously and many traders will refuse to deal with you. Remember not to start to bargain unless you’re serious about buying. Also remember that a difference of a few baht may not really make much difference to you, but it may be a big deal to the vendor.

The best bargains can usually be found at large markets. Chatuchak Market in Bangkok is a great place for bargain hunting, as is the night market in Chiang Mai.

Most towns have at least one large local market, where you can find everything from kitchen utensils, cheap clothes, bags and baubles at incredibly cheap prices.

Night markets are also a great place to shop. Usually opening around 5 pm and often packing up as late as 11 or 12 pm, these are also a great place to find a cheap meal, buy fruit and people watch.

Thailand’s Floating Markets are much photographed and provide an interesting appeal for tourists. The most visited floating market is Damnoen Saduak, which is also the largest. Most tour operators in and around Khaosan Road offer tours to Damnoen Saduak. However, these days the market is very crowded and sells mainly souvenirs and other tourist items. For a more authentic experience, head to the Bang Khu Wiang Floating Market, which is open daily from 04:00 and 07:00, or the Taling Chan Floating Market, which is open on weekends until around 2 pm.

If you’re looking for cheap technology, Panthip Plaza in Bangkok has it all. With 5 floors filled of every type of technological gadget and gismo you could possibly dream of, it is easy to spend half a day here. Remember to barter as most prices are negotiable and seem to be cheaper on the upper floors.

Siam Square in Bangkok is the place to go if you like large shopping centres. There are a wide range to choose from, including MBK, Paragon and Siam Discovery.

Big C is another shopping center chain and can be found all over Thailand in towns, cities and even quite small villages. As well as having its own store, which usually spans several floors, you can usually find dozens of other stores, including international stores such as Boots and The Body Shop.

Pomelo Salad

pomelo_saladOne fascinating aspect of Thai cuisine is the liberal use of its many exotic fruits in its dishes. Mango, coconut, papaya and even banana are some famous examples.

Pomelo is a large conical fruit about the size of a small coconut. It has a firm peel which allows the fruit to be peeled neatly, like a mandarin orange. Quite strangely, it tastes very much like grapefruit except it is much sweeter and will not make one cringe. The segments, which may be a pale yellow or even pinkish, are laid out like those of an orange or grapefruit and are easily removed to be eaten.

Yam Som – O is a pomelo salad. This curious dish comprises segments of juicy and plump pomelo teased into small morsels. It is tossed with sliced raw cabbage, cooked shrimp and sprinkled with fried shallots. The dish is moistened with some spicy sauce. To top off the experience, the salad is generously sprinkled with freshly roasted and crushed peanuts, which impart a fragrance to this dish which is otherwise mildly spicy.

Like many Thai dishes, the pomelo salad offers a hybrid of tastes and sensation. The cabbage imparts a crispness which is interrupted by the soft and juicy segments of pomelo whose unique taste, whether sweetish or mildly sour, colours the entire dish. The varied texture of the shallots and the crunchiness of the roasted, crushed peanuts, add to the eating sensation.
