Pa Lek does one thing and does it well: boat noodles. These intensely flavored, dark-broth bowls come in small portions, so you order several and keep count with the stacking bowls. The recipe is old-school Ayutthaya style with pork blood thickening the broth. Locals line up here before noon. Prices are almost absurdly cheap.
