What is Pad See Ew?
Pad see ew means “soy sauce stir-fry”. Wide fresh rice noodles (sen yai) are seared hard in a hot wok with sweet dark soy, egg, garlic and Chinese broccoli (kana), plus pork, chicken or beef.
The goal is wok hei — the smoky char from a very hot pan — and slightly caramelised edges on the noodles.
It is a great no-chilli dish; add vinegar with chillies or chilli flakes at the table if you want heat.
Regional versions
Its saucy sibling is rad na (noodles in thick gravy); pad kee mao (drunken noodles) is the spicy cousin.
How to order it
“Pad see ew moo” (pork). Ask for “sen yai” (wide noodles) — the default.
