What is Khao Soi?
Khao soi is the signature bowl of the north: flat egg noodles in a coconut curry broth fragrant with turmeric, curry powder and dried chilli, with a braised chicken drumstick or beef, and a nest of the same noodles deep-fried on top.
Its roots are usually traced to Chinese Muslim (Chin Haw) traders who travelled the caravan routes through Burma and Yunnan, which is why Chiang Mai’s Muslim quarter still serves some of the most loved bowls.
The side plate matters: pickled mustard greens, raw shallot and lime cut the richness. Add chilli oil to taste.
Regional versions
In Chiang Mai, also look for khao soi nam sai, a clear-broth version, and beef khao soi from halal shops.
How to order it
“Khao soi gai” (chicken) or “khao soi neua” (beef).
