What is Khao Kha Moo?
Khao kha moo is a Teochew-Chinese dish turned Thai street staple. Pork trotters and leg are braised for hours in soy, sugar, star anise, cinnamon and five-spice until the skin is soft and sticky.
Slices go over rice with a braised egg, pickled mustard greens and blanched Chinese kale, with a sharp chilli-garlic-vinegar sauce on the side and a raw garlic clove and chilli to bite.
Look for the big pot and the glossy leg in the window.
